Marinara Sauce

Marinara (mariner’s) sauce is an Italian red sauce usually made with tomatoes, garlic, herbs (such as basil), and onion.  I don’t use onion, but I do add Anchovy Paste.  I processed about ten pounds of tomatoes, mostly Roma (pictured).  I have found that roughly one pound of tomatoes makes about one serving of sauce.  I also use my mariner’s sauce for pizza sauce !
