Sweet Potato and Goat Cheese Mashed

Trying to create something new, I made this for our Saturday dinner guests – and it was great ! Skin and boil the potatoes, add room temperature Goat Cheese, a little Cream or Milk and whip to perfection (I used my KitchenAid). So creamy and delish, this may just become a staple here at Osteria di Moran !
