Pork Cheek, Braised

After months of trying to locate Pork Cheek at the West Side Market, I finally scored some last weekend. I have been obsessed with Pork Cheek since I had them at Deagan’s (https://refood1.wordpress.com/2010/12/16/deagans-kitchen-bar-4th-visit/). After visiting several recipe sites, no one seems to have discovered how awesome these are. I braised my Cheek in a mixture of White Wine, Apple Juice, Chicken Broth, Honey & Brown Sugar – accompanied by Sweet Potatoes, Onion, Brussels Sprouts, Rosemary Sprigs and Garlic. I removed the meat and veggies and reduced the sauce to a thick, sweet, extremely flavorful…um…sauce (reduction ?). I plated the Cheek and vegetables, spooning the reduction (sauce ?) over the meat only – so tender and amazing !
